Have you tried looking on the team page on each school's website? I would think that you would be able to find something for the coaches, at least.
Sometimes you just have to take a chance and try the address that you have. That is part of collecting autographs through the mail. Sometimes you will have success and sometimes you won't. Their are no 100% locks for success.

Google search the address of each schools athletic department.
Some schools are very strict about letting players sign autographs. The NCAA has rules about it.
